The first online training session hosted by the Bulgarian CULINART project team took place on 26.05.2021. The topic our chefs from Culinary Arts Institute at VUM presented and demonstrated in the first day was focused on the Artisan food and technologies in the kitchen. Our trainees are coming from 6 different countries: Spain, Italy, Portugal, France, Turkey and Bulgaria joining in piloting online training sessions delivered by the project partners on different topics. Chef Stanislav Kubarev was leading a practical training session for making traditional Bulgarian bread called “pogacha”.
In the second day of the training session (27.05.2021) the Program Director of Culinary Arts Institute – Chef Hugues Boutin and Chef Stanislav Kubarev were showing a practical demonstration. The students prepared traditional Bulgarian Shepherd’s salad and smoked fish with traditional potato salad using particular techniques and technologies.
In the third day of the training (28.05.2021) the very interesting and innovative topic of “Artisan vs. Industrial Food. Kitchen Equipment.” was presented.
