When we hear the words “innovation in the culinary arts,” our senses sharpen and prepare for an explosion of surprises. This is exactly what the students of the Culinary Arts Institute at Varna University of Management (VUM) promise us once again, as they eagerly anticipate this year’s edition of the Food Innovation Exhibition.

The young chefs have a unique opportunity to present their vision of the future of gastronomy within the module “Innovation and Creativity in the Culinary Arts.” Students from the Gastronomy and Culinary Arts and Hospitality and Culinary Arts programmes develop and present a unique original creation through which they demonstrate their knowledge and skills during their practical examination – the Food Innovation Exhibition.

Under the expert guidance of their chef instructors, the young talents have created a series of innovative products that go beyond the traditional definition of a “dish,” offering fresh perspectives on food, health, and sustainability.

The practical examination will take place on 21 January 2026 at the training restaurant of the Culinary Arts Institute at VUM. The students will be assessed by an expert jury consisting of Chef Hugues Boutin, Director of the Culinary Arts Institute; Assoc. Prof. Dr Maya Ivanova, Head of the Department of Tourism; Assistant Professor Irina Petkova, Programme Director of the Gastronomy and Culinary Arts programme for VUM’s strategic academic partner, Cardiff Metropolitan University; as well as external assessors from the culinary industry. The University’s partners from Metro Academy will also take part in the evaluation process, awarding special prizes to the best projects.

Each student will have their own stand where they will present their developed product. We lift the curtain on this celebration of innovative gastronomy with a preview of some of the projects to be showcased at Food Innovation Exhibition 2026: OVERRA – a vegan egg alternative; “Shake Me” – a DIY cocktail kit; Bubbly Caesar – a spherified Caesar dressing that extends the freshness of salads and reduces the use of plastic packaging; herbal chocolate bonbons suitable for people with diabetes; handcrafted effervescent tablets – a collection for seasonal health care; and many more culinary surprises.

The practical examination within the Food Innovation Exhibition is a natural continuation of the education of young culinary professionals at the Culinary Arts Institute at Varna University of Management. Students in both bachelor’s programmes receive not only a solid academic foundation but also intensive, practice-oriented training that prepares them for real-life challenges in a professional kitchen. Future chefs take part in the organisation of more than 20 themed dinners at the University’s training restaurant and participate in numerous events outside the University, both in Bulgaria and abroad. As part of the compulsory internships included in the Institute’s curriculum, students have the opportunity to gain experience in high-end restaurants across Europe, including establishments awarded a Michelin star.

The event has limited access and is not open to the general public. It is exclusively intended for media representatives, culinary industry professionals, university partners, and students’ close relatives.
