VUM was the first university in Central and Eastern Europe to introduce contemporary Culinary Arts Education 8 years ago. Now, VUM is giving its Culinary Studies a fresh start, new unique concept, new premises, brand new internships programmes and a team of world-class professionals through introducing Culinary Arts Institute and its accredited Bachelor’s Degree in Hospitality and Culinary Arts.

The Hospitality and Culinary Arts programme is offered in the professional settlement of Culinary Arts Institute at VUM. The programme is the only one in Eastern Europe that allows acquisition of higher education (full-time studies) in the field of hospitality and culinary arts, combining theoretical and practical training.

An interesting fact is that 95% of the students from the September Intake 2017 in Hospitality and Culinary Arts are going to Michelin Star restaurants, 15% of them will receive experience from Michelin restaurants with 3 stars. This study programme gives students the opportunity to work with some of the best chefs in the world, to acquire valuable experience in high-categorised restaurants, as well as to work in Michelin Star restaurants. The internships (up to 12 months during the education period) are provided with the support of VUM’s Career Center, which could offer the students Michelin internships in countries such as France, Spain, Portugal, Italy, Great Britain, Germany, Sweden, Denmark and others.

The creation of dishes and the practice of culinary arts аre combined with a series of interesting modules. During the period of education, the emphasis is placed on sustainable cooking, which is in accordance with nature’s laws. Students will learn how to correctly select quality products from local producers, seasonal products, they will see in detail how crops are cultivated in an organic garden. Additionally they will use the organic garden for practical lessons and will experiment in a special research and innovation laboratory. Last but not least, the programme provides field trips – visiting local wineries, truffle hunting, collecting herbs, visiting theme markets for spices in Istanbul, farmer markets etc.

Culinary Arts Institute (CAI) at VUM is an advanced contemporary alternative of the traditional culinary arts education. We try to study the classics, observe the modern trends, and yet try to revolutionize the culinary world. Thus we combine classics, modernity and arts. You will graduate CAI as a culinary architect, competitive on the national, regional and worldwide markets, not only because you have obtained innovative education at modern facilities, but also due to the fact that your creativity, innovative thinking and artistic skills have been boosted.

- YEAR 1 -

Acquisition of cooking skills and thorough product knowledge in accordance with the classics and the modern trends, like the use of local products, meats and fish, healthy cooking, sustainable seafood, “nose-to-tail cooking”. 30 ECTS credits are given for a semester.
European Credit Transfer and Accumulation System (ECTS) is a standard for comparing the study attainment and performance of students across the European Union and other collaborating European countries. Students may transfer their ECTS credits from one university to another, so they are added up to contribute to an individual’s degree program or training.

- YEAR 2 -

Develop the ability to pass on your skills and knowledge to your staff through training and mentoring, to give an expression of your own art into a trendy menu for your guests, and to efficiently manage your kitchen and overall food product costs, labor costs, food product turnover, etc.

Semester 3 (Duration 12+1 weeks)

 BA (HONS) HOSPITALITY AND CULINARY ARTS

The elective modules and the second foreign language module are offered when requested by a certain number of students.

Varna University of Management follows strictly the Rules and Regulations issued by the Ministry of Education and Science of the Republic of Bulgaria.

EU CITIZENS / BULGARIAN NATIONALS

High School Qualification

The prospect student needs to have successfully obtained secondary education from an officially recognized secondary school (high school) in Bulgaria or High School Diploma from an officially recognized secondary (high) school from another country, which is recognized in the order required by the National Education Act, article 5; Note: if still studying at a secondary (high) school, preliminary application is possible;

English Language Skills

English is the language of instruction, wherefore the prospect student needs to demonstrate English language skills through an internationally recognized English Language Certificate (TOEFL IBT, SAT, IELTS or similar). The Minimum scores are as follows: TOEFL IBT with score of min. 79 points; SAT over 1000 points from two sections; IELTS 6.0(or equivalent score from another testing system) Note: if there is no such certificate, the prospect student can hold an English language exam organized by VUM in-house or online - minimum score: 60%. Note: upon an insufficient level or lack of English language skills, the prospect student can enrol in a preparatory English language course at VUM or opt for an additional language module.

English Language Skills

English is the language of instruction, wherefore the prospect student needs to demonstrate English language skills through an internationally recognized English Language Certificate (TOEFL IBT, SAT, IELTS or similar). The minimum scores are as follows: TOEFL IBT with score of min. 79 points; SAT over 1000 points from two sections; IELTS 6.0(or equivalent score from another testing system); Prospect students whose native language or language of instruction at school is English, are exempt from the English Language Skills requirement. Note: if no certificate, the prospect student can hold an English language exam organized by VUM in-house or online. Note: upon an insufficient level of lack of English language skills, the prospect student can enrol in a preparatory English language course at VUM or opt for additional language module.

Our Culinary Arts Institute is located at Varna campus and classes are scheduled weekdays from 8 am to 6 pm.
